From the carnet de tournée of M. Allard, chef de cuisine, Hôtel des Trois-Roses, Avignon — Sunday lunch service, 24 septembre 1893
A single leaf, folio recto and verso, printed in two columns and ruled in red, kept among the kitchen papers of Joseph Allard (1854–1931), chef de cuisine at the Hôtel des Trois-Roses, rue Joseph-Vernet, Avignon, from 1888 until his retirement in 1919. The leaf is bound with the rest of the season's leaves into the chef's cahier de tournée 1893, deposited at the Bibliothèque municipale d'Avignon (fonds Allard, MS Av. 1962-114) by his nephew Émile Allard at the latter's death in 1962. The leaf is the only one in the carnet from the season's truffle-debut Sunday on which the somme commandée and the somme renvoyée do not agree to the gramme.
The form is one of M. Allard's own design, printed at his expense in 1891 at the Imprimerie Aubanel-père after he had spent three seasons at L'Hôtel de la Cloche in Dijon under M. Reine, where the bon-à-deux-copies had been used since 1873. The two columns — commandé, on the left, the chef de cuisine's order at the call; renvoyé, on the right, the chef de partie's verification at the passe — are printed with a column-rule between them in red, and the dose-au-plat of each service is to be entered in grammes by the responsible hand. The form asks the same question twice, at two times, by two hands, on the same line.
