A wire-bound shift book kept by the proprietor, L. G. Mahar, on a shelf below the cash register. Each day a half page, ballpoint, the day cook's morning prep on the front of the leaf, the proprietor's end-of-shift notes on the back. Pages numbered in sequence. Filed in a cardboard liquor-box marked 1971 when the leaves were full.

Wed dinner — 41 covers, ck-fried 33, catfish 6, cobbler 38. Two split tabs, one comp for the salesman from San Angelo who was good for it last month. Pickens dinner held 6:00–7:30 p.m. Did not come in. Marjorie wrapped the plate. The cook ate it at the dresser end of shift. The cobbler walked home with M.
Pickens has been Wed & Thurs dinner since he came home, six months less three weeks. Wed regular. Thurs whatever was running.

Sat. Marjorie wrapped a plate for Eilene Pickens at the counter. She would not take it. The kitchen does not get to send a plate the table will not eat.
